The Heads - Fine Dining Experience
The Heads is Mapleridgeatelier's flagship dining room on Level 47, where modern Australian cuisine - shaped by the continent's extraordinary larder and Sydney's multicultural energy - is served against a backdrop that takes in the full sweep of the Harbour, from the bridge pylons to the open Pacific beyond the Heads. Chef Priya Sundaram designed the tasting menu programme specifically for guests who want a meal to anchor the memory of a Sydney visit, not just accompany it. Tables are limited to 32 covers per service, ensuring the kitchen's attention is never divided.
Seven-Course Tasting Menu
Each course draws on a single Australian region or cultural community - a Coral Sea crudo, a Riverina lamb preparation, a native lemon myrtle dessert - building a geography of the continent across the table.
Harbour View for Every Table
The room is designed with no interior seating - every one of the 32 covers faces the glass, positioned so the Opera House sails appear at eye level regardless of where you are seated.
Producer Provenance Cards
Each course arrives with a card detailing the grower, fisher, or maker behind the primary ingredient - a direct thread between the guest's plate and the paddock, reef, or orchard it came from.
Private Dining Room - The Gorge
A glass-walled private dining room seating up to twelve is available for celebrations, corporate dinners, and milestone events, with a bespoke menu developed in consultation with the kitchen team.
Chef's Counter - Four Seats
Four counter seats positioned directly at the pass allow guests to watch the kitchen in full flight, with the chef narrating each course - the most intimate version of the The Heads experience available.
Sunrise Breakfast - Exclusive Add-On
Suite guests may reserve a private Sunrise Breakfast on the Level 47 terrace - a three-course menu served as the city wakes, available only to Mapleridgeatelier hotel guests and limited to two bookings per morning.
